SMG Lead Cook in Long Beach, California

SUMMARY: ASM Global, the leader in privately managed public assembly facilities has an excellent and immediate opening for a Lead Cook. You will be responsible for supervising production, culinary standards, sanitation, and training kitchen staff. Additionally, the position supports the organization mission by supporting the kitchen in menu development, food and ingredient specifications, training programs, dining, retail services and catering. RESPONSIBILITIES: * Plan, organize and supervise daily culinary operation of retail and catering services * Coordinate the work of production. * Supports standards as well as assists in creation of menus and recipes * Maintain proper production, safety, and sanitation standards * Participate in the daily preparation of standard and gourmet food items * Evaluate the quality of raw food and ensure the quality of the finished products * Inspection assigned units to observe quality of food preparation and service; food appearance; and cleanliness and sanitation of production and service areas, equipment, and employee appearance * Supervise and participate in the preparation and display of menu items for special functions * Support the production of operational reports and analyses setting forth progress, adverse trends and make appropriate recommendations. * Maintain proper inventory controls for food, supplies, and equipment. Interview, select, train and evaluate supervisory and support staff * Perform other related duties, tasks and responsibilities as required from time to time. * Good work ethic. * Excellent communication and inter-personal skills. * Ability to undertake and complete multiple tasks. * Follow proper reporting procedures for accidents and incidents. * Adhere to all regulations including blood borne pathogens, infection control, * use of hazardous materials and fire safety. * Serve food in the proper portion size and at the proper temperature. * Arrive to work at the scheduled time * Flexible to work night, weekends, and holidays. * Perform other related duties as required * Requires ability to work flexible hours, including nights, weekends, and holidays, in addition to normal business hours. Education and Experience: * Bachelor's degree in Institutional Management, Nutrition, Dietetics, or certification by a recognized Culinary Institution or equivalent combination of education and experience * Demonstrated institutional, hotel, or restaurant culinary skills to including large quantity production * Must have 3- 5 years of culinary supervisory or management experience.
